I like to cook

I have learned to really like cooking. I did not grow up liking to cook, nor did I enjoy spending any amount of time in the kitchen. My husband and I still joke today, that when we first got married (over 15 years ago) and it was my turn to cook, I would call Pizza Hut.

Well, things have changed. I like  veggies. I love roasted veggies. I like spice and flavor. But I keep things simple. I don’t have much patience in the kitchen and by no means am I particularly gifted or creative. I need meals to be simple, easy to reheat and pretty much fool proof.

Here is a look at things I have made over the past week or so. I was not travelling and knew that I would be eating at home all week, so I did quite a bit of cooking.

Cauliflower with béchamel.

Tip : great way to get kids to eat cauliflower. Here I made the béchamel but it is just as easy to buy. I usually throw in any left over broccoli I might have, or I know there are lots of recipes out there with cauliflower and potato.

Cauliflower crust pizza. This is quite time consuming but it is so good and it makes enough for 3 meals. I top it with veggies and ham.

Tip : There are a ton of good recipes out there, just be sure to squeeze the excess water out of your cauliflower once it is cooked and before making the crust.

Tandoori chicken skewers. So good. A new recipe from Diane Sanfilippo’s 21 Day Sugar Detox cookbook. Huge hit with the family. A ton a flavor and so moist, this is probably one of my favorite recipes from her cookbook.

Tip : the tandoori / sweet potato fries / guacamole combination was great.

Other meals : Lamb with carottes, green beans and broccoli.  Steak with roasted peppers, roasted sweet potatoes and carottes, broccoli.

And to use up a couple green apples I had hanging around, I made Apple cinnamon muffins from Nummy for my tummy. I just discovered this blog but many of the recipes are very tempting and I will definitely go back.

I don’t always cook this much but I was around this weekend so made an effort to cook, so I wouldn’t have to do much cooking during the week.

    I’ve always liked to cook but all of this blogging has really inspired me and I too love to cook. I made one of the cauliflower pizzas too a few months back. They are good!
