Feeling motivated

Hello everyone, how was your weekend ? Mine was pretty low key, I got to read, exercise, watch a movie… and cook. I was feeling motivated and made 3 new recipes.

 

I started off Saturday morning meal planning. I had peppers, carrots, cauliflower and zucchini in the fridge that I did not want to go to waste. I had a couple recipes I had cut out of a magazine a while back, and had also made a list out of the 21 Day Sugar Detox cookbook that I had wanted to try. On my meal plan :

  • Chili (new)
  • Zoodles (zucchini noodles) with meat (which meat depended on what I saw at the supermarket)
  • Veggie pancakes (new) & bacon
  • Fish & frozen veggies
  • Carbonara pasta (for my kids)
  • Cauliflower crust pizza (new)

I went grocery shopping and only bought what I needed on top of what was in my fridge. The mushrooms looked good, I figured I could use them some how.

I was overall really happy with my recipes, even if I did not follow to the letter my plan.

Cauliflower crust pizza, during and after. You shred the cauliflower, steam it, mix it with some cheese and an egg, bake it a bit, top it off then bake it some more. It was the first time I tried it. I had read several on line recipes before improvising my own. I would have cooked it a bit more because I wanted something a bit crunchier, but IT WAS GOOD.

With all the shredded cauliflower I made cauliflower curried “rice” (21 Day Sugar Detox recipe), with fish and veggie pancakes. I used my carrots, shredded them, mixed with an egg and a bit of coconut flour, then cooked them in a fry pan. Even my husband liked them.

I also made chili. It was good, but could have been spicier.

I also made carbonara pasta for my girls, and we had our first strawberries of the season.

I exercised both days. Got  a fabulous run in on Saturday. It was really nice out and I just kept going. 11km. It was probably a bit much because my foot hurt this morning so I decided to go to the pool. I swam laps for an hour.

I worked on my blog, trying to figure a couple things out. I am not yet successful but am working on it ! I also took advantage of the warm weather, read and got to enjoy my coffee on my balcony. My geraniums are growing, a definite sign of spring as well as those Cherry Blossoms in the background.

A great weekend overall and its amazing to think that I have been blogging now for three months. Thank you for reading, I appreciate it.

    You’re cooking up a storm! I had tried cauliflower pizza crust before and it came out terribly! None of it stuck together. Perhaps the trick is the egg and cheese–I don’t think the recipe I tried had either of those in it.
    How were the veggie pancakes? I love a good chili! My husband makes a pretty good one and keeps it relatively mild for me (then he throws sriracha sauce on top for himself).
    No new recipes lately here, but planning on trying something new tomorrow night! A Mediterranean-inspired platter of eggplant, homemade hummus, and nut balls.

      For the caulk crust pizza you need to be sure to squeeze out all the water… or it gets really mushy. Veggie pancakes, same thing. Everything came out going, going to try it again this week !
