Eats this week

Happy Saturday ! How was your week ? I didn’t have any travel for work. It was good to be home rather than on the road for almost 5 weeks.


One of the reasons I was so happy to be home, besides seeing my husband and children and sleeping in my own bed, was eating home made food. Not only can eating out wreak havoc on my digestive system but I was craving fruits and veggies. I overloaded on onions, peppers, butternut squash, broccoli… and red quinoa.

Here are just a few of my meals this week :

A big batch of protein pancakes made with coconut flour. I make a big batch, freeze them, and just warm up 2 each morning. Add almost butter and some banana, it holds me over until lunch.

I cut up a ton of peppers on the weekend, ready to roast any evening. I don’t mind cooking during the week but prep can be too much, so I do most of it weekends.

Stir fry chicken with peppers, onions, home made guac, basmati rice and lots of Mexican spices :

Not too many spring foods yet at the farmer’s market. The weather hasn’t been great and things are slow to come. Hoping to see more this weekend, but in the mean time I keep loading up on peppers and onions.

And…. I did go out to dinner with my husband. It had been a very long time since we had had a date night. I didn’t take pictures of all the food, just our drinks and dessert, profiteroles that were so good. Usually we split dessert but both of us wanted dessert yesterday. It was worth it !

    Those pancakes look yummy!! I have been so unsuccessful using coconut flour-everything I have tried to make has ended up in the trash :(…I will keep trying though :).

    I grill my meat every weekend for meal prep and add peppers and onions to chang it up if I get tired of it. I need to start roasting peppers-thanks for the reminder ;).

    I have a reaction to quiona 🙁 so I have stopped eating it.

      When you use coconut flour you do not need a lot or else things get very very dry.Be sure you have lots of very moist ingredients in your recipe.

    I am a huge food prepper because I’m weak and can easily stray off track. If I’ve got my healthy meals and snacks ready and at hand resisting that chocolate bar is much easier.

      I am with you… if I don’t prep I easily stray. Not so much for meals, but for snacks. I bought a ton of nuts this weekend for the upcoming week.

    I always crave my own home cooked meals after a few days too. Traveling gets old after a while doesn’t it? I love that red quinoa too!

      I actually prefer the red quinoa… and for some reason I am finding it easily here. I still make your quinoa cakes frequently !
