Breakfast !

Breakfast is my absolute favorite meal of the day. I like to take my time, eat my food slowly, sip my coffee and I will get up 30 minutes earlier if needed, so I can start the day like this.

However, my breakfast is not typical of the French, where most have bread with butter and jam, and a big bowl of tea or coffee. I don’t eat much bread, and I have found that eating protein agrees with my system much more, holding me over until lunch. So here is a peak into some of my typical breakfast options.

  1. Eggs. Scrambled. In an omelet. Quiche. Hard boiled. I’ll take them in any form as long as the yolk is cooked!

2. Yogurt. I usually have it with half a mashed banana. Once in a while I will add some nuts on top because I like anything crunchy.

3. Muffins. There are a ton of healthy recipes out there. I need to make them because you rarely find muffins in France, and if you do they are very industrial / processed.

4. Pancakes. I have 3 or 4 different recipes made with coconut flour or almond flour. I always have them with almond butter. Another great option that holds me over until lunch. I make a huge batch and freeze them.

5. What I do not have is pastries, croissants, speciality breads. Once in a while we might get them on a Sunday but it would be for a special occasion or guests.

Eggs, pancakes, muffins….that is definitely my American influence. NO ONE in France eats eggs for breakfast.

The only thing I miss from the US is bagels and English muffins…. neither of which you can find here that I would consider even close to decent.

    Breakfast is my favorite! I love pancakes and belgian waffles. That said, my go-to is eggs scrambled with a bunch of veggies.

      Have you tried mashing some steamed butternut squash and mixing it in with your egg ? Delicious !

    I love eggs for breakfast, and often have a small muffin before a workout or as a mid-morning snack. I also love croissants though ….

    I’m not a big breakfast eater. Usually it’s a bowl of cereal, coffee, and oj for me. But lunch? I love an omelet for lunch! Actually anything with eggs is good in my book.

    I eat a lot of eggs. I like to eat scrambled eggs with avocado, cheese, tomatoes and bacon mixed in. Your muffins look good!

    so interesting that no one from france eats eggs for breakfast! i’m just now getting into eggs but they have to be in frittata form or fried VERY hard.

    I am picky about eggs but eat a lot of hard boiled egg whites (hate the yolk unless it’s scrambled). I’m allergic to coconut and almonds so those alternatives aren’t options for me but I love Kodiak Cake mix and do pancakes quite a bit with blueberries or mini choco chips if I’m feeling something savory!
